The earthenware construction ensures gentle, even heat so pastry remains tender and crusty without over-baking. Plus, ceramic bakeware retains heat beautifully so you can take it right from the oven to the table to serve warm, melt-in-your-mouth slices of French apple pie or peach crumble. The fluted edge also aids serving by allowing air to come between the crust and the dish. Part of Emile Henrys Provencale line, the pie dish is finished with an extremely hard, melted-glass glaze that resists scratching, chipping and cracking so you can cut slices straight from the dish without marring the surface.The design of this beautiful earthenware plate has its roots in authentic pottery craftsmanship from the Provence region of France but with a more durable construction that can stand up to the demands of modern-day use. This 9-inch-diameter pie plate makes a deep-dish pie or a crunchy-topped fruit crisp to feed about eight dessert lovers. The plate is made from local clay in Marcigny, France, using a pottery tradition that has been alive since 1850. The clay is an excellent material for retaining heat, so your fresh-baked desserts stay warm as you gather guests to the table.
This Proven?ale bakeware has beautiful, consistent color with some slight wearing around the rims of the plates to give it an earthy, rustic feel and fluted edges resembling a pie crust. Using Emile Henry's exclusive C?radon process, the dish is coated with a smooth and shiny lead-free glaze and then fired at high temperatures, producing a finish so hard that it will not crack, craze, or discolor. This plate also has a high thermal resistance, so it can safely go from freezer to oven without damaging, and is safe for the microwave, dishwasher, and broiler.
