Kitchen and Housewares Reviews of Emile Henry "Flame-Top" Stovetop TagineCustomer Review: superior quality Summary: 5 Starsafter reading about moroccan cooking, i decided to research and purchase a tagine for my own use. living in new york, i thought this would be an easy undertaking, but was surprised to find out how many choices were available, making it difficult to come to a decision. the question of whether i was going to use it over a flame or in the oven occurred to me, and whether the more decorative tagines i saw were for cooking or presentation only. i was delighted to find that the Emile Henry model was both fire- and oven-proof as well as available in attractive colors. the generous size allows for preparation of a larger meal than some other, smaller models, and i found that although it cost more than i thought it would, it was still less expensive than the competitor, Le Creuset. after trying it out for the first time(making the classic chicken with olives and preserved lemons), i was immediately impressed by the superior results achieved. it is great for making almost any kind of stew you can think of, moroccan or otherwise(you should only be limited by your imagination!)and has superior heat distribution. the fact that it can go directly from the stovetop to the oven, is dishwasher-safe, and chip-and scratch-resistant make it well worth the price, so much so, that when i recently damaged the top to the one i already own(alas, it is not drop-resistant), i didn't think twice about ordering another. i now consider this item an indespensible addition to my collection of cookware. paired with a good cookbook, it will make an excellent addition to any kitchen.
Description of Emile Henry "Flame-Top" Stovetop TagineThe word tajine refers to both the contents and the container. A tagine is a dish made from glazed clay, which has a lid like a pointed hat, allowing the steam to circulate inside. All recipes cooked in this type of dish are also called tagine.
For Flame Top- An innovation in ceramics technology, Emile Henry's new line of Burgundy Clay Flame-Top ceramics products work directly on a gas flame or an electric or halogen hob without a diffuser, without any fear of cracking or breaking. Much lighter, (30%), than many types of comparable metal cookware products, Flame-Top is microwave and dishwasher-safe, cleans up very easily, is extremely strong and durable, goes under the broiler, and can go directly from a freezer or a refrigerator to a hot oven to the table, where it will retain the cooking heat for a very long time.
