To make a perfect souffle, the heat needs to be spread evenly over the bottom and sides of the dish, which is why the souffle dish has high, vertical sides. It also has to retain the heat, to stop the souffle from losing it's height. This is the great advantage of earthenware dishes. There, potters still hand craft each piece from the local Burgundy Clay - one of the purest of clays, and finish each one with a process known as CERADON, which makes them extremely solid and durable. Containing no lead or cadmium, the clay is one of the best materials for baking and serving.Ideal for baking soufflés and deep casseroles, this 2-quart dish is a traditional French shape with a ribbed exterior. It can go directly from freezer to oven, into the microwave, under the broiler, and through the dishwasher without harming its glossy, lead-free glaze, which does not absorb odors or moisture and is so hard it will not crack, discolor, or scratch--even if food is cut on it. Beautiful enough to grace a dining table, it measures 8-1/4 inches in diameter and 3-1/2 inches high and weighs 2.1 pounds.
